Meatless Monday

About 6 weeks ago, I told Jerry that I wanted to start eating vegetarian 1 day a week. Eating vegetarian 1 day a week makes more of a symbolic statement more than anything else, but it helps remind me to strive to do small things that are good for the environment and for myself. Jerry was on board as far as making a vegetarian dinner one day a week but he didn't want to join me in commiting to going veg for an entire day; still, his willingness to do dinner is huge since he does 99.9% of our meal planning, grocery shopping and cooking. So, we decided to make Monday "Meatless."

Each week, I keep thinking I should log my food for my Meatless Mondays, but I keep forgetting, but today? I remembered! So, here are my meals for the day:

Breakfast was a bowl of this cereal with skim milk, and I had two cups of coffee with milk. Snack #1 was more cereal and most of a banana (the small cut-off portion of the banana was used for Norah's morning snack).
Usually, I try to steer clear of frozen, packaged food, but some days, they are the most convienent thing for me. And, at least Kashi's frozen entrees are lower in sodium and have high fiber and protein content, and this is one of my favorites: It has plantains, sweet potatoes, black beans and polenta. It's kinda spicy and sweet at the same time. Delish.
Snack #2: String cheese and tortilla chips and mango salsa.
And for dinner, I have to thank Jerry for making yummy veggie flatbread pizzas: One of mine was veggies, pesto, and cheese; and the other was pesto, arugula, mushrooms and cheese.
Unfortunately, the pesto kinda repeated on me during my evening run, but that seems to be pesto's MO with me -- one time around is not enough for pesto, but it doesn't keep me from going back to it again and again.

So, yeah, that was my food today (and you could probably add a few Oreos to that since they seem to be calling my name right now). On to the run: It was an awesome 4 miler. I thought it was gonna suck since it was 87 degrees out when I went out the door at 7:30 pm, but it actually rocked. I was like a lithe little deer out there bounding along like it was the easiest thing in the world. So glad the mojo is back!

Meatless Monday's is a good idea. I've been thinking about limiting my meat more. Maybe one day a week would do the trick. Where did you get that frozen Kashi? It looks good!

We go meatless a lot in the winter as I make a number of meatless soups. I do a fair number of nights in the summer where I just have a big salad and my protein is nuts or beans, but hubby is not into that. I may have to think more about meatless options that he would eat...

I love meatless mondays. We went meatless for April and we are still going strong. I think we may make it permanent. HOw awesome that he does all the cooking. I convinced Jason to cook in April and now I don't want to go back to me cooking, so I think we are going to alternate or share in the prep more since most vegetarian meals require a lot of prep (chopping veggies).

As a pescatarian (a vegetarian who eats seafood), I applaud you for going Meatless once a week. Let me know if you need any suggestions to get through and make it less boring, but healthy.

I also try to do one meatless dinner a week, in fact I have Kumera (sweet potato), potato and pumpkin roasting in the oven right now ready to throw into a Fritta along with some vegetables. Sadly, I'm hopeless at thinking past eggs! LOL

And a good run always makes the day better :)

The Kashi entrees are super yummy! I've 95% cut out red meat and feel so much better for it.

I went walking around the same time last night and all I could think is "I can't believe Jess runs in this heat."

The Meatless Monday idea is a good one. If you continue to expand it to other days, I will have to buy stock in Kashi products :) You do realize if you were Catholic, during Lent you would have a second day built into the calendar "Fish Fridays." Give me a break, I thought it was funny...

I'm trying to do the same -- meatless at least one day a week. It's funny... your breakfast is my lunch today -- Kashi cereal w/skim milk and a banana. Breakfast was a chocolate, banana, peanut butter smoothie. Rice and beans and a couple of veggies for dinner.

Wow you eat very "clean" good for you! I have a problem w/my diet, I like crap too much. hahah...but I do enjoy eating healthy, I have made better efforts recently. I am going to take some tips from your selections! I really like that pizza, it looks yummy.

I loooove Kashi cereals they are my staple every morning.

I'm not a huge fan of frozen meals either, but you're right, sometimes they are just the most convenient, easiest option.

Interesting!!! I know that a few days a week I am trying to help my girlfriend on her diet (gluten free - Paleo) by trying to make sure we are making meals for dinner that she can eat, but that also appeal to me. We have done pretty well so far. Never gone meatless before ..... Wonder how long I would last? :)
